Não havia frequentado nenhum curso, então, depois de muita pesquisa e muitos textos lidos, em especial o livro &lt;a href="http://howtobrew.homebrewer.com.br/index.php/P%C3%A1gina_principal"&gt;&lt;i&gt;"How to Brew"&lt;/i&gt;&lt;/a&gt; de John Palmer, me sentia pronto para a primeira tentativa.&lt;br /&gt;&lt;br /&gt;Apesar de muitos conselhos contra, optei por uma Pilsen. Mas seria uma pilsen diferente, muito mais encorpada. O resultado foi uma breja que em pouca coisa lembra uma lager. Foi ai, então, que surgiu a &lt;b&gt;Weihnachtsmann&lt;/b&gt; (Papai Noel em alemão ou, literalmente, Homem do Natal), que passaria a ser feita anualmente, na época natalina. A ideia é não seguir um estilo a risca, mas arriscar. E claro, usar os amigos como cobaias. O nome da cervejaria foi escolhido logo depois. Se chamaria &lt;b&gt;Canton de Fribourg&lt;/b&gt;, em homenagem à região suiça, que tem como capital a cidade de Fribourg, que inspirou o nome da cidade de Nova Friburgo, na região serrana do Rio de Janeiro, onde faço minhas criações.&lt;br /&gt;&lt;br /&gt;Quase um ano depois, estou ainda inexperiente na produção caseira, mas no caminho certo.&amp;nbsp; Nesse segundo natal de sua história, a &lt;b&gt;Weihnachtsmann 2010&lt;/b&gt; será feita a base de uma receita clara de trigo.
